Tavuk Shish: Authentic Chicken Shish

Tavuk Shish, otherwise known as Turkish chicken kebab. The kebab is a time-honoured favourite around the world, originating from Turkey. Originally quite basic in appearance, this meat dish is solely reliant on high quality meat to enliven the flavour experience. There are many versions of this traditional dish so we present to you our Rox Meat take. 


Ingredients:

2 chicken breasts boneless and skinless

1 medium onion

2 cloves of garlic

½ cup plain yoghurt

3 tablespoons olive oil

2 tablespoons tomato paste

1 teaspoon ground black pepper

1 teaspoon paprika

1 teaspoon salt

Garnish: dry oregano, sumac, paprika


Steps to make it:

  1. Rinse chicken in cold water and blot the meat dry with paper towels
  2. Cut the meat into bite-size cubes
  3. Using the finest grater, make a pulp from the onion and garlic cloves
  4. Pour this pulp and juice into a very fine mesh strainer and, using a wooden spoon, press out the juice into a separate bowl
  5. Discard the onion and garlic pulp
  6. In a glass or ceramic bowl, combine the onion-garlic juice, yoghurt, olive oil, tomato paste, black pepper, paprika and salt
  7. Add the cubed chicken and toss to coat
  8. Cover the bowl and refrigerate it for at least 4 hours or overnight for best results
  9. If using bamboo skewers, soak them in water for a few hours so they don’t ignite on the grill
  10. Preheat the grill to a medium heat
  11. Remove the pieces from the marinade and thread them onto the skewers
  12. Sprinkle the kebabs with salt and place them on the grill. 
  13. Grill them evenly on all sides, about 12 minutes total. You can sprinkle Turkish spices like oregano, sumac for extra flavour
  14. Serve it with rice, bulgur and your favourite salad
  15. You can add hot red pepper to spice things up
