Roasted garlic hummus

Ingredients: 

  •  1 can chickpeas 15 oz
  • 2 tablespoons roasted garlic
  • ½ tablespoons lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon oregano

The origins of hummus is hotly debated but can be traced back as far as the 13th century. Now many a modern dinner party would go amiss if hummus was not included in the usual line up of pre-meal nibbles. This delicious dip begs to be scooped up and can be a companion to many different dishes. From the original combination of chickpeas, tahini and olive oil, there are now many variants with embellishments of all kinds, including our hard to resist Roasted Garlic Hummus

Steps to make it:

  1. In a food processor, process chickpeas, garlic, olive oil, lemon juice and oregano until desired consistency.
  2. If hummus is too thick, simply add olive oil in small amounts until ready
  3. Serve it garnished with finely chopped parsley, drizzled with olive oil with hot pitta bread, pitta chips or carrot, celery, or cucumber sticks.
